Week ended 27th July 2014

This week we are catering for the grand finale for Nine Network's “The Voice”.

What an exciting event to be a part of, there will be 250 guests expected to the VIP tent before the show where we will be supplying them with an array of our gourmet sandwiches, rare roast beef rosti’s, smoked salmon blini’s, BBQ Hoi-sin duck rice paper rolls and sushi pieces.

Week ended 20th July 2014

This week at Corella Fine Foods we are testing and trying out some new nutritious and healthy canapés and meals for our catering arm and also for our cafe. We always like to be on top of our game in terms style and flavour but we also aim to provide as many healthy options as we can as well. We also endeavour to cater to all different dietary requirements such as gluten intolerances, dairy intolerances, vegetarians and vegans. We are currently collaborating with a nutritionist to assist us with coming up with some healthy options. Keep an eye out for the launch of a new menu additions.

Week ended 13th July 2014

This week we saw us catering for a 60th  at the newly refurbished Cromer Community Centre. It was a French themed party for 100 guests; the hall was decorated in the French colours of red, white and blue. We served our lamb cutlets with caramelised mint dipping sauce, gruyere cheese and caramelised onion tartlets as well as the ever popular sliders. The guests danced the night away on the checkered floor which made for a fantastic backdrop. It was such a fun night and a very happy lady who called me on Monday to say how wonderful her birthday event was and how excellent the Corella staff were on the night. We always love a Monday that starts off like that.

Week ended 6th July 2014

We have had a fair few enquiries about our famous Corella cakes over this last week and have had quite a few orders for this weekend in particular. People are always saying once you try the Corella mud cake you will be mud cake fan for life, but probably only a Corella mud cake fan. We can also do gluten free cakes such as orange and almond and the chocolate hazelnut cakes. We have also done some bespoke cakes in the past so don’t ever hesitate to call up and ask if you have something a little different that you would like to do.

Week ended 29th June 2014

A big week of film shoots and photo shoots here at Corella Fine Foods.

We catered for a women’s fashion label photo shoot in Avalon with breakfast wraps and coffee as well as fruit and yoghurt. We also catered for 2 different three day ad shoots, 1 in the Ku-ring-gai Chase National Park; it looked pretty interesting as it was set on the side of a huge waterfall. We supplied them with breakfast daily along with morning tea, lunch and afternoon tea.

 It was a very busy week but we do enjoy being able to feed lots of hungry hard working photographers, actors, models and the rest that are on site. The Northern Beaches is such a great location for film shoots; we get to go to some pretty lovely houses and locations when we do our deliveries. Week ended 22nd June 2014

We started a very special catering job this week at Fox Studios for our friends at Channel Nine! We will be catering for the coming weeks for the TV show The Voice in the VIP tent at Fox Studios. We will be preparing an array of sushi, sandwiches, rice paper rolls, frittatas and some different pieces of finger food each week.

We have just launched our “Winter Warmer” catering special. If you book your function during June, July or August we will provide a complimentary glass of mulled wine for each of your guests on arrival. We have had a great response and this weekend we had 5 new functions!

Friday we catered for a small intimate birthday party on Sydney’s Northern Beaches, we served some delicious canapés for the guests while they mingled and drunk the mulled wine. Saturday was a little more on the wild side, we catered for an ABBA themed 50th birthday party, they hired an Abba tribute band and everyone was singing and dancing as well as sampling Corella’s canapés. As well as this we had another 50th only streets away and 2 60ths! A special weekend of catering milestone birthdays!

This week I have noticed a huge increase in our wedding enquiries which is great, all of our summer brides are starting to get organised early. Helping couples choose their wedding menu is one of the best parts of my job. There are so many different styles and cuisines to choose from, it can be very overwhelming. It helps to have a clear idea of what you want before you come for your first meeting, and then be guided by your caterer as to what would suit your wedding style. It is always a good idea to have a tasting with your caterer and see what styles of food they offer, at Corella we are happy to organise a tasting for you whenever it suits.

Another busy week of corporate catering for Corella – orders are coming in from all over Sydney. It is fabulous to have developed a reputation as being one of the best caterers for corporate catering.

We started the week with a breakfast delivery just around the corner to Mona Vale on Sydney’s Northern Beaches. We then delivered morning tea, afternoon tea and lunch to George Street in the city and then up to Belrose for some more corporate catering orders.

Our week pretty much continues like that with orders to the City, North Sydney, Ryde – we love being able to roam all over Sydney deliver delicious boardroom lunches and sweet treats to our corporate clients.

What a week for Corella Fine Foods!!!

We started in Sydney CBD where we catered a boardroom luncheon for one of our repeat corporate clients. They have an amazing view of Sydney Harbour so it is never a dull view. We served up some of our delicious slow roast lamb along with roast vegetables and rocket and parmesan salad. We also officially introduced a new menu to our repertoire - alternate drop functions. We have always done alternate drop by request but with so many recently we better make it official!

This week was also the week for Australia’s biggest morning tea for the Cancer Council. Emily set up a stall for us at Travelview Avalon and we donated over $400 in funds raised to the Cancer Council. Great job team!

Week ended 18th May 2014

It has been a very busy week at Corella HQ – we have been travelling all over Sydney catering for corporate lunches. We have also been getting ready for the weekend as we have another big week of take home finger food and custom-made orders – such as an order for 50 of our mini sticky date puddings with caramel sauce, they are such a crowd pleaser.

We also had a lovely lady approach us this week to cater for the opening of her new spa and salon on Avalon. We served her guests with some beautiful Australian sparkling wine as well as our smoked salmon blinis and gruyere cheese tartlets. We only did 3 different cold option canapés for the ladies to enjoy with their bubbly but it was exactly the right amount for this type of launch. Corella caterers for all different types of events and we can tailor our menus to suit the style and budget of any event. Have a look at this beautiful new spa open now in Avalon.

Week ended 11th May 2014

Another big conference on the Northern Beaches this week. Found ourselves in Palm Beach at a beautiful house to cater breakfast, lunch and dinner for a large Sydney CBD based client.

The conference lasted two days and we supplied things such as mini ham and cheese croissants and sweet and savoury muffins. For lunches we supplied sandwiches, wraps and salads along with some of our finger food for an afternoon tea snack. We were able to deliver and pick up all platters and equipment as well as give the kitchen a tidy for the client during the day and then for their dinner we sent in our wonderful, experienced Corella wait staff to cook up a storm. As I mentioned a couple of weeks ago there are so many wonderful places on the Northern Beaches to enjoy your next corporate conference whether it be a surf club or even a private houses for hire.

Week ended 4th May 2014

This week we had a mid-week influx of last minute DIY finger food catering. I guess a lot of people realised how beautiful the weather forecast was and decided to party! Our take home (DIY) finger food menu is great for when you have a few people around and you would like a small selection of canapés that you can serve yourself.

A few weeks ago we mentioned that we catered for Dick Smith’s 70th birthday... well we had such great response from his event and had so many enquiries about pizza party catering we have added that to our repertoire of items you can choose from. We now can provide delicious homemade bases with a selection of toppings that can either be cooked from your home oven or we can tow in a huge trailer pizza oven and really create that pizza party experience.

Plenty of corporate conference catering to keep us buy this week – there are some fabulous venues to hold conferences on the Northern Beaches such as the Narrabeen Beach SLSC where we catered for the StageGear Conference this week over 2 days. The brief - light & healthy. We made up large Thai beef salads and chicken & mango salads along with a selection of fresh Vietnamese rice paper rolls and fruit platters. We supplied all of the hire equipment and platters they needed for their 2 day event to run smoothly as well as organising a Corella staff member to attend the last day for the last few hours to help them clean up and pack up so they could make it into the city for the opening night of Strictly Ballroom!

Our week has been jam packed with corporate catering. We have been doing lots of catering for our very loyal Northern Beaches clients but have also gained some fabulous clients in Sydney CBD and also North Sydney.

We have recently updated our corporate catering menu to feature some great alternatives for your next corporate lunch, like this mouth watering cocktail pastry platter.

Week ended 06th April 2014

This week had the experience of catering for Lexus and it was at one of our favourite houses to cater in - Jamie Durie’s stunning Northern Beaches home.

Our brief - 23 journalists and media representatives would be hoping into the new Lexus range driving through the Northern Beaches to Jamie’s house for a buffet lunch then straight back to the airport to fly out, which meant we needed to be super quick and efficient in serving up canapes followed by the buffet. The group were seated at the gorgeous tables that we hired and styled.

It was a fabulous media event hosted at an exquisite Northern Beaches location. What more could you want?

Week ended 30th March 2014

This week we catered for two fabulous Northern Beaches functions. The first was a party to celebrate a 50th it was a wild one with cocktail making machines and everyone was dressed up and singing karaoke!

The guests had a great time sampling our delicious canapés in between dancing and singing.

The next day we catered a more subdued 50th although equally as fun. We catered sit down luncheon of close family and friends. The garden was set up with a long lunch table with balloons and streamers and they had hired a fabulous band to sing while they were mingling with canapés and then eating lunch. We served our famous sticky date pudding with caramel sauce for dessert and they then topped off the day with a fabulous cake made especially for the birthday boy with a golf motif on top.

Week ended Sunday 23rd March-:

Another week begins and we have a huge birthday party to cater for in Terrey Hills for Dick Smith’s 70th birthday. 

We organised to hire in a pizza oven for the event and we made all of our own pizza dough, rolled it, topped it and cooked it on site for the 130 guests. We also served some fresh light salads as well as risotto balls and sausage rolls to go along with the pizzas. It was a great night and everyone enjoyed the food as well as the enormous 16 inch sponge cake with jam, cream and strawberries - Dick's favourite!

We have really picked up our ready made meal orders since the launch of the weekly meal menu and they keep us busy early in the week. Later in the week we get in undated with “do it yourself” catering for the weekend as well as preparing for a 90th birthday on Friday at Collaroy War Vets and a 21st birthday in Palm Beach on Friday night. We ended the week with a 40th birthday party in Frenchs Forest and also coming to an end this week is our three month catering contract with our French Film Crew, it has been a great three months providing them with meals and seeing the reality TV show being filmed. A bientot for now!!!

Week ended Sunday 16th March-:

This week we made the long journey down south to the Royal National Park where we catered for a wedding. It was a big day, we started packing the catering vans at 11am and didn’t make it back to Warriewood until after 11pm, but it was so worth it to make the day so special. Our brief was a little different to what we usually do, we started them off with a grazing table of corn chips with homemade guacamole, chilli cheese dip and tomato salsa along with crusty sourdough bread and olive oil and vegetarian frittatas with chilli jam dipping sauce. Guests enjoyed the grazing table while they were playing games on the lawn and enjoying champagne. They then moved in for the main meal which consisted of sharing platters of mini burgers, hot dogs and tacos as well as jalapeno poppers, risotto balls and fish cakes. We complemented that with three salads and finished off with mini Pavlovas, chocolate fudge brownies and fresh fruit. The bride and groom came into the office to thank us personally as they were so happy with how the day turned out. 

Apart from our wedding catering we also made our way to Mosman in the midst of the huge storm that hit the North on Saturday night to cater for a lovely ladies 50th birthday party then on Sunday we were Newport as the other gigantic storm hit and we ended up working throughout the six hour black out using the gas oven and makeshift lighting, the staff at Corella really go above and beyond for our clients.

Week ending Sunday 9th March-:

We started the week with our ready made meals orders and deliveries all over Sydney’s Northern beaches and even beyond at this point, we are getting requests from far and wide from the south, west and east of Sydney, it’s fabulous. We had a very steady week with our “do it yourself” catering, we organised a 3.5kg salmon to be poached and a 3.5kg ham to be glazed for a lady to take to the polo for lunch with her friends. We had our mid-week corporate catering orders and also geared up for another big weekend of catering. Our weekend functions started on Thursday this week where we catered for 40 guests in Wahroonga for a birthday party, we served our tiger prawns and pumpkin risotto balls and the clients were thrilled with the food. On Friday we catered for a bereavement service for 120 people in the beautiful seaside suburb of Careel Bay, the lady was cherished by all of her family and generations of grandchildren and even great grandchildren were able to attend, it was a beautiful afternoon. Saturday night saw us cater for 5 functions on Sydney’s Northern Beaches starting with a huge 40th birthday in Collaroy Plateau, the photos from the party looked like the guests were having so much fun and complimented by our food, what more would you want from a party. We then moved on to Seaforth, Cromer and Manly where we catered for 60th, 70th and 80th birthday parties as well as an intimate function for 20 in our home suburb of Warriewood, another fabulous week at Corella Fine Foods!

Week ending Sunday 1st of March-:

Monday came around again as they always do and we have just launched our weekly ready made meals menu that we email out every week to our database to order meals before a Monday to be delivered all over the Northern Beaches on a Tuesday. It is a great idea for time poor families who want healthy, hearty, dinners that are ready in the snap of a finger. So after whipping up some Chicken Cacciatore and Lamb Rogan Josh we made a trip down to Berowra Waters for some clients who were on a houseboat for a corporate event. We served up some of our famous BBQ Hoi-sin duck rice paper rolls as well as organising an alcohol beverage package to be delivered to their boat.

Friday came around and we organised two buffet functions, one for a lovely lady on the North Shore in Linfield who was celebrating her birthday with 20 other girlfriends and we also catered a corporate lunch at South Narrabeen SLSC where we finished off their meal with a delicious caramel and chocolate tart with fresh cream and strawberries..How about I leave you with that thought..

Week ended Sunday 23rd February-:

We are gearing up for a massive weekend at Corella Catering; we start the week with our usual corporate lunch and morning tea catering around the Northern Beaches and then move onto preparing for the weekend. We have numerous “do it yourself/DIY" catering that is picked up from our cafe in Bilgola Plateau over the weekend. We can do anything from gourmet wraps and sandwiches to salads and whole poached salmons. Our catering this weekend was spread far and wide starting out in Kingsford by the Sydney International Airport, we then travelled over to Rhodes to cater for a corporate function. Later in the day we made our way back to Sydney’s Northern Beaches to cater for a surprise 50th birthday party in lovely Freshwater, we catered for a big 60th party in Belrose and finally capped off our Saturday night in a stunning Bilgola Beach house. Sunday we were back at it again working a surprise birthday party in Avalon and a 21st birthday BBQ party at Narrabeen SLSC where we served up beef sausages, chicken skewers, roast veges, pasta salads, caramelised pear & walnut salads as well as rolls and condiments. It filled up all the party-goers so they could continue into the night with full tummies, and we are off for some well earned rest.

Week ended Sunday 16th February-:

We are full this week catering around Sydney’s Northern Beaches in some of our favourite surf clubs. We kicked off the week with some corporate catering with our lovely clients from Citizen Watches in Frenchs Forest as well as catering a full week of corporate conference catering for Stallergenes.

Friday saw us at Warriewood SLSC catering for one of our loyal clients, we catered for his 50th last year and then he organised a big 50th surprise party for his wife this year. Saturday saw us catering for another wedding celebration, this time it was at the lovely Narrabeen SLSC – this couple were married in Haiti and then came home to celebrate with their family and friends. Our last function for the weekend was a fundraiser for Vision Personal Training, it was raising money for the “Tour de Chance” this was held at Mona Vale SLSC, what a weekend!

Week ended Sunday 9th February-:

We had a wonderful event to cater for this Monday; it was called champagne and tissues.

We were asked by Bilgola Plateau Primary School to organise some nibbles for the mums of the new kindergarten kids starting their first day at school. It was a really lovely thing to be a part of and sooo cute seeing all the little ones off on their first day.

We were kept busy this week with some mid week readymade meal orders as well as some corporate lunches that we delivered all over Sydney’s Northern Beaches, up to Belrose and Frenchs Forest, down to Dee Why and Brookvale.

This week we also catered for a 70th birthday party that a lovely wife threw for her husband in North Narrabeen, we served some Corella Classics like the BBQ Hoi-sin duck rice paper rolls and the fish and chip cones, yummy!

Week ended Sunday 2nd February-:

We kicked off this week with a corporate boardroom lunch in Sydney city in the AMP building, what a wonderful view that was from the 57th floor. We served up some baked salmon fillets with our Moroccan cous cous and seasonal roast vegetables; we topped off the lunch with some of our petit fours and fresh fruit.

Thursday night saw us at the Mona Vale Golf Club exhibiting for the Northern Beaches Wedding Expo, we got to meet some lovely brides and talk about their plans for wedding day catering. Even though some had already booked their function venues and didn’t require catering for the actual day we were able to talk through catering for their hens parties and kitchen teas.

Week ended Sunday 25th January-:

Corporate catering kicked started this week with most companies back into the swing of things themselves. We had our lovely clients from Pharmacare back ordering their corporate lunch staples and also our wonderful Pittwater Council clients’ back getting their afternoon meeting treats.

But it wasn’t all mid-week madness at Corella we also catered for a surprise 50th birthday party that was filled with Russian games and dancing as well as a gorgeous afternoon wedding celebration party, the bride and groom were married in November overseas so this was their chance to celebrate with their families and friends who couldn’t make the wedding.

Week ended Sunday 19th January-:

Well we really felt as though we got back into the swing of things this week when we were approached to cater for the next three months for a French reality TV show that was being filmed in Bayview. Our brief was that anywhere between 30 to 40 of the film crew will need lunch and dinner delivered everyday for the next three months... of course we can do that!!

Along with preparing for our three month long stint of catering for a French film crew we also had our fabulous Sydney clients to keep us busy. We catered this week for a 40th birthday in Terrey Hills, a huge 50th wedding anniversary out at Normanhurst and topped off the week with a 90th birthday celebration in Bayview.

Week ended Sunday 12th January-:

We have started back in 2014 with a catering bang!

We started off the year catering for three functions on the Northern Beaches; we catered for a wonderful smaller function for three couples who were all celebrating their 60th wedding anniversaries. We also catered for a huge 50th birthday celebration where we altered one of our absolute favourite cakes for the birthday boy from coconut, raspberry and white chocolate to coconut, raspberry and dark chocolate as that was his favourite type of chocolate. Sunday saw us cater for a 100th birthday party in Collaroy Plateau at the War Vets.

All in all it was a wonderful start to our year and we cannot wait for what 2014 brings!

The Month of December:-

Well there was way too much going on this month to possibly be able to recount it all... but I am going to do my best!

All the planning and preparation that we did in November was going to come to use in the first week on December. We started off by catering for the Northern Beaches Wedding Expo Christmas party at the South Narrabeen SLSC – we have been a part of the wedding expo for a few years now and we were honoured when asked to cater for the event, we served our famous slider burger along with fish and chips and homemade mince tarts. Thursday arrives and it’s our Northern Beaches Christian School buffet for 200 adults and 90 children, after getting all of the equipment together we pack three of our vans including the huge extra refrigerated van we hired and we head for Terrey Hills. There were 15 staff preparing the food and setting up buffet tables. When it came time to serve we managed to serve 290 people a choice of our scrumptious lasagne, parmesan crumbed chicken fillets, roast vegetables, Thai noodle salad and bocconcini and tomato salad all in under 30 minutes. It was such a lovely night, they showed videos of all the children and made speeches, it was such a great night to be a part of.

After packing up we dragged our weary feet home to have a rest, but not too much of a rest as we were back on deck first thing in the morning!

It was like Christmas morning (without the mimosa’s and presents) there was so much excitement and build up to this day, we were all buzzing! We headed over to the Channel 9 studios on Sydney’s North Shore in all of our vans and started getting everything ready at about 3pm, our fabulous 30 staff members arrived about 4pm and the guests arrived at 5.30pm. It was all systems go from then until after midnight that night. We served over 600 people an array of homemade sausage rolls, pumpkin risotto balls, poached chicken Vietnamese rice paper rolls, fish and chip cones, chicken and beef stir fry on crusty baguettes. We also set up two grazing tables one full of antipasto treats, the other full of fresh prawns, oysters and sushi rolls. The night was such a success our food even got a mention on SmoothFM the following morning. It was the biggest week in Corella’s history, we not only catered two massive events we also have numerous smaller functions as well as several orders for our DIY finger food which totalled over 2000 pieces of finger food.

It was also at this time we were approached by an amazing couple who asked us if we could help them in their bid to raise money to help their little boy Roki who was born with cerebral palsy. They wanted us to make our rocky road with a twist; we substituted the glazed cherries and nuts for jelly snakes and candy banana’s. In total we have made 3700 pieces of Roki Road and they have raised over $25,000 to help get them to India so Roki can have treatment. It’s such a wonderful and inspiring story and I would really encourage anyone who sees this to visit www.rokiroad.com.

Well work really didn’t stop for us this month we catered in total for over 30 functions in 22 days!! No wonder Christmas has come around so quickly this year. As Christmas Eve draws nearer we have just received our deliveries of turkeys and hams and are ready to have a marathon baking session this weekend. As well as all of our Christmas orders and last minute finger food party orders we also had another wonderful request this week – I had a gentleman call to ask if we could supply some of our famous lasagnes and cottage pies for a boat race that was taking place from Sydney to Hobart, we needed to make enough for 16 hardworking sailors who will be departing our shores on Boxing day!! Good luck to them and we hope our food keeps your tummies full!!

Well that is us for 2013, we had such a wonderful year, the biggest in Corella’s 26 years and we couldn’t have done it without all of the support of our community and loyal customers... and of course our brave and fearless team of wonderful staff. The month of November:-

November saw the Christmas party season really get going, the phones were ringing non-stop!!

We started off our month of November with a fearsome bang – Melbourne Cup!

I think we had a delivery to just about every suburb on the Northern Beaches with our food. So many of our regular corporate clients turned to us for help, and there were also plenty of new corporate customers from the Northern Beaches, Sydney and beyond who enjoyed our corporate catering on the big day too.

We delivered so much DIY food I don’t think there was anyone in our office that got to even listen to the big race... but we weren’t too bothered as long as everyone got their food and enjoyed it!

We had some very exciting news given to us at about this point in November; we had been asked if we would like to tender for the Nine Network Christmas party... umm of course!! The PA for the Director of Television had attended one of our functions and loved the food, so we worked really hard to put a great quote together and they decided to let us loose on their 600 guests!

On top of preparing for the Channel 9 Christmas party we also had been asked back to quote for the Northern Beaches Christian School year 6 graduation dinner for 300 guests... and guess what... they are both a night apart.  So while we were sending out quotes left right and centre we were also catering for so many wonderful clients some of whom were Lisa & Stephen Chapman from West Pennant Hills, we catered for their Moulin Rouge themed 40th birthday bash! We catered over in Sydney city for our friends at Brookfield multiplex, as well as catering for the Amber Technologies Christmas party aboard the FantaSea cruiser. We had a fabulous November month and cannot wait for the silly season to begin... or has it already!!!???

The month of October:-

Well it has been a long time between updates; we have been finding it extremely difficult to sit down for more than a few seconds here at Corella HQ. Sydney’s Northern Beaches and beyond has been partying like crazy, we love it!

Well the end of October into early November saw us cater for many weddings from Bilgola Beach to Hornsby and everything in between.

We started off at Narrabeen SLSC catering for Jodie and Joel, their wedding was so much fun – they hired a photo booth and everyone had a ball dressing up and taking wacky photos, they also had a quirky yellow theme that was evident from the flowers to shoes and even the groom’s bowtie. We served some tasty canapés like the lamb cutlets and our zesty Thai chicken salad in boats, to ensure everyone had full tummies at the end of the night we carved a ham and left some bread rolls with homemade condiments for later on.

We were then lucky enough to be part of a gorgeous wedding at a private residence in Bayview; they had such a fabulous idea for a bonbonniere, I have to share it, it was a mini hangover pack. They were very conscious about having enough food so we did both our slider burgers for them plus the fish and chip cones. They were so happy and everyone was commenting on how full they were.

We then catered for Christine and Tim at the Bilgola Surf Club, loving her choice of sunflowers for her bouquet as it brightened up the atmosphere. We served our new canapé of authentic chicken Pad Thai with crunchy bean sprouts and peanuts it went down a treat, we also launched our roaming desserts this weekend. We served berry Pavlova in mason jars with raffia tied around the outside and cute wooden spoons to eat with.

The next wedding we catered for was a surprise; it was in a lovely private house looking out over Curl Curl beach. The bride arrived in her white dress and shocked all of the guests who were told it was their engagement party, another lovely canapé style wedding reception.

Our next wedding was again in a beautiful private house in Mosman, we are so lucky we get to see all of these gorgeous houses. It was a weekend of torrential rain and I received a phone call early Friday morning saying they may have to move the ceremony from the garden to the house and in that case they would like us to be their earlier than expected – we held off till the last minute and luckily the clouds parted and some blue sky peeked through and the happy couple were able to marry in the garden as first planned.

We served up some of our famous roast beef on potato rosti’s and smoked salmon waffles.

Well the horrid clouds came back again and as we piled into our two vans at Corella HQ with ovens, fryers, and tables and made our way to Hornsby to cater for a wedding in a marquee for 90 guests we all had our fingers crossed that this couple would be able to enjoy their wedding day with a sneak peak of sunshine. Of course it poured and poured and poured as we were running around setting up kitchens and preparing for the arrival of the guests and bridal party. We were soaked but the sun did shine as the bridal party pulled up in their cars, and we were able to serve theme their canapés in the garden followed by their main course in the marquee; phew that was lucky!!

Another big week of catering at Corella Fine Foods, luckily we had Monday off to recharge our batteries, this week we really got to show off our new menu items. On Friday we met and catered for a very special couple Keiva and Nigel, who held a fundraiser at their business, Arch Capital in Brookvale, for the Humpty Dumpty Foundation where they raised over $10,000, it was an amazing effort for a great cause. We were able to serve up our new rustic handmade quiches which come in either a vegetarian option of sundried tomato & fetta or also the much loved Lorraine.

On Saturday we catered for some of our lovely clients in Dee Why on Sydney’s Northern Beaches where we got to show off another of our new dishes, Pad Thai. This is a great substantial dish that’s light but filling for those warm summer nights.

Sunday saw us travel to Collaroy where we catered for a christening where as well as serving some delicious prawns, fish and chips and lamb cutlet lets for the adults we also did kids platters of ham and cheese sandwiches, chicken tenders and chipolatas with sauce. We then spent the afternoon catering aboard a 100ft cruiser for an intimate party of thirty. We headed into the Sydney CBD to Woolloomooloo and got straight into serving up our new summery canapé of fresh rockmelon wrapped in thinly sliced prosciutto, a great choice for such a hot day. After the canapés were served we moved onto the buffet which had a whole poached salmon with caperberries and hollandaise sauce along with poached chicken, fillet of beef and some yummy sides to accompany. It was a fabulous day out on the water, until that wind and swell picked up and the boat could not make it back around to Woolloomooloo so everyone alighted at Darling Harbour and the boat had to dock for the night.

Who is ready for the last long weekend before Christmas? We are... But before we can take a well earned Monday off and close our Warriewood HQ, we need to get through the week and prepare everything for the long weekend. We actually have quite a few out of towner’s up this way over the long weekend and who would blame them for coming to the Northern Beaches for an escape. We do lots of take home finger food or ready to eat salads and meat platters for people who need holiday catering or are just hiring a beautiful house for a party. We also have a huge range of take home meals and ready to heat dinners which can be stored in the freezer, all you have to do is defrost while you are out enjoying the beach, come home put it on the stove and voila there is your dinner. Well with all of that said we are off to the beach ourselves. So many beautiful beaches to choose from... from Palm Beach down to Mona Vale & Narrabeen, or further south there’s Curl Curl, Freshwater and Queenscliff. As the first month of spring comes to a close we are as busy as ever with catering on the Northern Beaches and beyond. This week we were kept busy with our regular corporate catering clients in Frenchs Forest and Belrose as well as preparing for a huge Friday night of catering. We started off by travelling into the Sydney CBD to cater for clients whose office is in the spectacular World Square Building. As they have just moved into their offices they decided to throw an office-warming party. Their brief was to keep it short and sweet so we tailored their canapé menu from our usual 8 canapés to just 4 which kept them in the time frame they wanted. We also supplied them with our 2 hour beverage service with a selection of red wine, white wine and sparkling along with a light and full strength beer and soft drinks.

At the same time we had a team in Bella Vista to cater for our regular clients from Felton Constructions, again we supplied all of the catering equipment as we cooked from the garage so all of their clients could enjoy seeing the amazing display home set up. Lastly, a bit closer to home in Bilgola Plateau to cater for one of our cafe regulars daughter’s 21st birthdays, we served up all of our favourite canapés and filled all their little tummies to the brim. The party goers then hopped on a hired bus to the Sydney CBD to continue partying while we made our way to bed... what a night!!

Another busy week at Corella Catering, I have a feeling this party season is going to be BIG – 'cause it has definitely started with a bang!

We started off by catering a lovely 3 course sit down dinner for a wonderful family who had made their way from Sydney’s city suburb of Kensington to “Whalers” a beautiful house they hired in Palm Beach for the week. We started their meal off with a Thai prawn salad with an authentic Nim Jam dressing, we moved on to their main meal which was a marinated fillet of beef with a choice of sauce to accompany, rosemary infused potatoes and broccoli, bean & snowpea salad. Dessert was a vanilla bean pannacotta with a sticky caramel sauce, it tasted as delicious as it sounds I can assure you. So Friday flies around before we know it, we are busy mid week with so many corporate catering engagements - lunches and morning teas!!

To start the weekend off we are on our way to Balmain to cater for a 70th birthday party, our ever popular rosemary crusted lamb cutlets are on the menu as well as the smoked salmon waffles with caper cream. Saturday we have another birthday party to get to and it’s in Frenchs Forest, we then head over to Avalon for a baby shower (so many ladies ready to pop at this time of year) here we are doing our prawns which are usually marinated in a coriander and sweet chilli glaze but as the mummy to be has made gluten free requests we are more than happy to change up the marinade to accommodate special requests. Sunday comes around before we know it just like Friday’s do and we are catering for a High Tea in a spectacular house in Bayview, this event is being put on by two lovely ladies who attend Vision Personal Training Mona Vale where they won a voucher for Corella through a weight loss challenge. So they thoughtfully put there voucher towards a good cause. This is a very special event as all money raised from ticket revenue and raffles will be donated to the Humpty Dumpty Foundation a charity that raises money to purchase vital children’s medical equipment for over 200 hospitals across Sydney.

 No rest for the wicked this week, Monday morning bright and early our lovely Corella waitstaff were off to cater for a corporate retreat breakfast over on Mackerel Beach. So we hopped onto our water taxi and headed over to set up for a breakfast of yummy seasonal fruit, warm ham and cheese croissants and some homemade muesli with creamy yoghurt. After we had prepared, served and cleaned up we were back on our way to Palm Beach to get ready for their dinner that evening. We headed back over as the sun was setting behind the mountains and served up some BBQ steaks with homemade relish along with some perfectly seasoned parmesan and basil crumbed chicken breasts which were accompanied by three summery side dishes and topped off with our international cheese platters.

Tuesday Morning bright and early we were back over there with our chefs to cook a big breakkie for some sore heads. We then returned that night for the final dinner of pesto crusted salmon fillets, marinated beef with mango salsa, rosemary infused baby spuds and our famous caramelised pear and walnut salad, the night ended on a high with our rhubarb and apple crumble served with double cream.  We had Wednesday day to recover and prepare for a luncheon with the lovely people at Watermark in Castle Cove, we served an array of salads with crusty sourdough bread and finished the luncheon off with zesty individual lemon tarts. On Saturday we headed down to the magnificent Illuka Road in Palm Beach to cater for a 70th Birthday, we served up many of our popular canapés and a huge 14 inch square orange and almond cake which had written on it “its a good life” – well we sure agree it is!!!! We are off again to get some well earned “zzz’s” as we have the Northern Beaches Wedding Expo tomorrow!!

What a weekend at Corella Catering!!!

We started off at an amazing house in Sydney’s beautiful Northern Beaches suburb of Avalon; catering for a 60th wedding anniversary. They situated their party in the back garden of the house which had been decorated in fairy lights, it looked stunning. We complimented the ambiance by serving our lovely BBQ duck rice paper rolls and the favourite of the night the spicy Thai fish cakes. We then made our way to the lovely Clareville Beach where we catered for the birthday of one of our loyal customers – it so nice when our customers use us for many different celebrations for their families and friends; she knew exactly what she wanted on her menu as well so it made my job easier. We then made our way back around the Bilgola bends to Newport where we had a huge 40th birthday party to set up for, again for some of our wonderfully loyal customers. Here we served up our famous fish and chips along with the always delicious creamy authentic buttermilk chicken and jasmine rice. Are you tired yet? We made our way back down the beaches to cater for an 18th birthday party just around the corner from Corella HQ in Warriewood. Like any 18th birthday party you assume 70 people will turn up but you end up with 120, not to worry at Corella we always ensure there is plenty for the guests and the unexpected ones!! Our juicy beef slider burgers were a huge hit at the party along with the chicken stir-fried Hokkien noodles we served at the end of the night. Well that’s us off to bed now!! We have a baby shower to cater for in the morning!!! Goodnight!!!

Well we are officially out of winter and boy the weather is really turning it on for the first day of spring. Which in fact happens to be Father’s Day – all of those Dad’s out there must have been really good this year to deserve this weather. What a week we had a Corella organising catering for our Northern Beaches families. We had orders coming in left right and centre – as people were realising how fabulous the weather was going to be over the weekend I guess they decided entertaining would be the thing to do and catering using DIY finger foods & sandwiches from Corella was the answer. We also put on a Father’s Day Special at our Bilgola Deli Cafe for the Dads of a breakfast burrito, large coffee and the newspaper for $17.50, pretty good value if you ask me. We hope all of our wonderful Northern Beaches families have a wonderful, relaxing weekend in the sun – and don’t forget to spoil Dad silly!

At Corella we are very enthusiastic about getting involved in local charity work and this week we were able to cater for a post Oxfam 100km walk party.

The brave participants of the 100km walk, started at Parsley Bay and walked over two days all the way to Sydney Harbour. On the Sunday once they had finished the walk we catered for some of the walking groups and their support crews at a party in Balgowlah on Sydney’s Northern Beaches.

We served up our vegetarian primavera with penne pasta, a great hearty choice when catering for such hungry guests. We also served fish and chips and mussaman beef curry some other great substantial canapé choices that will really fill your guests up at your next party.

Having substantial canapé choices at a function is a great way to bulk up the amount of food being served. One of the most frequently asked questions I get as a function coordinator is “are you sure there will be enough food?” I can confidentially say “yes” to this question as here at Corella Catering we ensure no one ever goes home hungry... even after walking 100kms.

We are getting geared up this week for a huge engagement party we are catering for on Sydney’s Northern Beaches for 150 guests. We are excited to be putting on a spectacular spread of our canapés for the gorgeous bride and groom to be at their amazing house ‘Myola’ on Newport Beach.

Our brief was simple but precise, they wanted their guests to be dazzled by canapés that looked elegant, tasted fabulous and filled everyone up for the long night of dancing, oh and we had to include duck pancakes as it’s the bride-to-be’s fave finger food. Not a problem, we put our heads down and started planning.

Firstly, we trialled out and perfected the duck pancakes as this is something yet to be included on Corella’s catering menu.  We then started logistical planning as to how we would cook and serve all the food from the garage. We went down to our lovely friends at AVA hire in Brookvale to get a huge commercial oven that we would use – we then loaded everything into our Corella Catering vans and headed down to Newport Beach.

The night was fabulous; the house looked gorgeous as it was decked out with fairy lights and lanterns, they had a fire pit, a pianist and we even transformed their steam room into a huge ice bucket to keep drinks cold.

Our staff, in particular our functions co-ordinator Emily, worked tirelessly to organise this event and make sure everything was just perfect for the lovely couple Skye and Brendan!!!

This week at Corella I was lucky enough to catch up with Courtney Gold, a fabulous Northern Beaches Wedding photographer & co-owner of Lover’s Lane Photography and a very old friend. She took the pictures for the stunning wedding of Laura & Chris that we catered for last November at Bilgola Beach Surf Club.

Here is a little about her, her business and her love for wedding photography!!

Tell me a little about your background?

My photography story starts with me picking up my Dad’s vintage Ricoh SLR in primary school and making my little sister model around the backyard! The whole roll turned out, and that’s where my love for photography started and I haven’t put a camera down since! I was lucky enough to have photography as a subject at my high school with all black and white film and complete manual processing in a dark room. I had an awesome teacher and amazing parents who provided me with all the tools I ever needed. It was a really great way to hone my craft and learn about the essence of where photography started. I have been working as a photographer and traveling for the past six years and have now settled down on Sydney’s Northern Beaches with my husband.

How did you get into wedding photography?

I had just got back from traveling, about six years ago now (all inspired) and I ran into a local photographer who needed a second shooter at a wedding she was doing that weekend, I was pretty nervous but jumped straight in and absolutely loved being such a huge part of someone’s special day. From then on I did a lot of second shooting at weddings and when I was ready I went out on my own. Last year I was working on a wedding where I met Lyndon Marceau, who is now my business partner at the new company we started earlier his year called Lovers Lane Photography, which is a Sydney based Wedding Photography Company.


Your fave wedding you ever shot and why?

I love every wedding for a different reason but I would have to say that Laura and Chris’s wedding was probably my favorite (this was one wedding I definitely cried at) not only was it set at beautiful Bilgola Beach, the reception was decorated beautifully, the catering & food was amazing the band was awesome, the bride looked stunning, this wedding was just so heartfelt, so emotional and so full of love I just had the best day and I felt so privileged to be a part of such a special day.

This week at Corella HQ as well as satisfying the taste buds of our wonderful Sydney clients with delicious catering, we were also busy preparing for the Northern Beaches Wedding Expo at Mona Vale Golf Club. It was a wonderful event where we were able to chat to all of the other wonderful wedding vendors that are part of the NBWE. There were photographers, cakemakers, celebrants and everything in between. We showcased a few of our hot and cold canapés along with some cupcakes.

We met lots of Northern Beaches Brides in various stages of planning their weddings, many were sad that they had already booked their venues and therefore couldn’t take advantage of our services for their reception but I solved this by telling them about our high tea catering which is perfect for bridal showers or hens parties, as well as our ability to cater for engagement parties, wedding rehearsal dinners, post wedding celebrations and much more. I even cheekily mentioned we can cater for baby showers!

The Manly Daily asked its facebook readers for recommendations on the best winter comfort food on the Northern Beaches and the responses pointed straight at Corella Fine Foods and our take home meals. This week we went from Sydney’s Northern Beaches to Sydney’s North Shore, to the very stunning, Shore Boys School. Having seen the view from the school we were instantly mesmerised, it looks straight out to Sydney Harbour.

This function saw us catering for a Christmas in July, 50th birthday party. The room was styled beautifully with a huge Christmas tree; we served our winter warmer Moroccan lamb and cous cous and another favourite, our lamb cutlets. After we had prepared and served our feast, the host asked us to serve her Christmas specialty coconut and rum balls – I snuck a taste they were delicious.

This got me thinking about the fabulous Christmas treats Corella makes, we do things like our whole glazed ham, stuffed & roast turkey, Christmas puddings, mince tarts, white Christmas, rocky road and the chocolate truffles and the Corella rum balls. YUMMO! It’s never too early to start thinking about Christmas party catering – or Christmas day for that matter!

This week we packed our vans and headed off the Northern Beaches to cater for a home opening in Bella Vista. The logistics of the job made it a bit different, as it was a home opening and the guests would be using the kitchen, we were required to prepare all of our food in the... wait for it... Garage. But... not to fear Corella Catering is here!

So for 150 guests we unpacked our two portable ovens, our trestle tables and everything else in between. Everything went amazingly well and the weather really turned it on for us.. who said entertaining in winter had to be under grey skies?!

We were able to serve some of our all time favourites canapes - the sliders, along with antipasto tartlets and smoked salmon waffles. It was a fabulous event and one of our waitresses even got her picture taken with the very gorgeous Kylie Gillies from Channel 7’s “The Morning Show”.

Parties in a Winter Wonderland

So the Winter months are well upon us and even though the skies are grey that is no reason to not throw a party!! While winter cocktail parties are not always the number one on peoples to do list during the colder months people are always excited to attend a party, especially when warm winter catering is on the menu. While the catering will be a major focus of the night, there are a few other things to consider before you put your dancing shoes on. So at Corella this week I have been thinking of those little things that you need to keep in mind when hosting a winter party. Firstly, set the scene with your invites or theme, you might want to go for something really extravagant like a Winter wonderland party or it might be something a bit more low key. Next start to think about the venue & setting; is there enough room inside, is it warm enough? We have a great relationship with Camelot Party Hire and AVA Hire Brookvale, both located on the Northern Beaches and we can organise everything from outdoor heating to keep everyone warm to marquees to keep everyone dry!! Then you need to think about the food, we suggest that you opt for more hot canapés at this time of the year, shots of hot soup are really great to give everyone that instant hit of warmth. Lights, Camera, Action!!!

This week at Corella we had our catering kitchen taken over by a film crew – filming a commercial in our kitchen!!! It reminded us that our very own chef Adam filmed an ad a little while ago (NOTE: Let it buffer and skip to 15:44 mins) http://foodservicegateway.com.au/archives/7268

The son of one of our Bilgola Deli staff was also lucky enough to be cast in the ad as the Chef's apprentice, check him out in his chef uniform!

Not only are we involved in this indusrty in lending out our kitchen, we are also really happy to have built a soild reputation with film and PR companies across Sydney as having yummy and filling catering to keep crews going throughout long days of filming. Not a week goes by without a crew filming at a nearby stunning Northern Beaches location contacting us for help!

This week at Corella we have been discussing venues, what bought this to the forefront of our minds was the wedding we catered for this week. It was held in Sydney’s Northern Beaches – at the famous Palm Beach. Although Palm Beach is a very popular destination for weddings on the Northern Beaches the cute little cafe – Cafe 2108 which is directly opposite the beach isn’t often utilised for weddings. The cafe does not have a full kitchen so as the caterers we brought in our own ovens and fryers and cooking tops – but we had a huge space to work in so it suited us well.

Venues are generally the first thing you will look at and some great things to keep in mind are:

  • The type of event you are holding – is it a wedding, birthday party, corporate function or family get together
  • How many people are attending and is it sit down or canapés – whether you can have sit down will depend to how big the venue is and how many people you are inviting.
  • What activities will you need to have space for at the venue – for a wedding you will most probably want to have space for the dance floor, the cake, facilities for speeches or some corporate events might hold team building exercises.
  • Check if your venue is licensed or not  and do your venue provide bar staff – not to worry if they don’t do either because at Corella we are fully licensed and can provide you with our fabulous bar waiters.
  • Lastly, it is best if you are able to take you caterer for a walk through of the venue and the kitchen – this was we can make sure everything runs smoothly and you can sit back and enjoy your party.

It’s been a busy week of catering at Corella Fine Foods; we had three functions this week to prepare for. Our first function was being held in the lovely Bondi Pavilion on Bondi Beach; this was a 70th birthday for a lovely new client of ours who called us just a couple of days prior to organise the event - we are always happy to help with last minute bookings! She was of course so pleased with our wonderful food – even though there are no kitchen facilities at the pavilion we were able to serve up a full range of finger food, including our delicious mussaman beef curry and Moroccan lamb pies. Our second two functions were here on the gorgeous Northern Beaches – our first stop was a surprise party in Newport where we served our famous beef sliders and we then went on to Avalon Beach Bowling club for a 40th birthday party where we partied on into the night!

This week at Corella Catering we have been looking back into our catering files at some gorgeous weddings we have done across the Northern Beaches & Sydney surrounds – did you know that a wedding we catered for made it into Cosmopolitan Bride 2013?

Back on November 3rd 2012 we catered for this stunning wedding at Bilgola Surf Life Saving Club.

Their theme was ‘beach luxe’ and they hit the nail right on the head, from the gorgeous styling by The Style Salon to our catering, everything was planned down to perfection.

We served finger food including our rare roast beef on potato rostis to the juicy lamb cutlets and a favourite with everyone our fish and chip cones.

People can be at times hesitant about hosting a cocktail style wedding function but here at Corella we ensure that no one ever leaves one of our functions hungry. We have our substantial options like the fish and chip cones or our pails of authentic curry’s and Thai salads to keep people filled up and ready to take on the night of dancing and celebrating with the bride and groom.

We have literally not stopped here at Corella, catering nonstop through the summer and coming into winter, it’s not slowing down. The Sydney weather has been in our favour too, it has been magnificent and this weekend was no exception.

We had three wonderful events to cater for this weekend on the Northern Beaches and all three houses had the most stunning views. We started off our weekend in Newport at a house that looked out over Bungan Beach; here we helped a couple celebrate their 10 year wedding anniversary. The very thoughtful husband had organised that the event be catered by Corella with finger food as a surprise to his wife, he also organised a band and a huge ice sculpture in the shape of a 10 for her. As we served our scrumptious salmon waffles and fish and chip cones the wife had a little surprise of her own for her husband, she came out dressed in her wedding dress and they danced while their close friends sung their favourite song, how sweet is that!

We then made our way to the Northern end of the Beaches on Sunday where we catered for two functions in Palm Beach, one was in a gorgeous house overlooking Whale Beach for a 60th birthday. The next was down below the bible gardens; here we set up a buffet for over 100 people. We catered with finger food to start - our BBQ hoi-sin duck rolls and spoons of scallops to begin, we then served a whole poached salmon and fillet of beef accompanied by some crisp roast veges and yummy caramelised pear and walnut salad. It was such a great day and not a bad view for us – take a look!!!

What a fun week we had at Corella Fine Foods. Not only were we catering for the likes of Westpac and Pittwater Council but we had two big photo shoots to cater for in Palm Beach and Bayview on Sydney’s Northern Beaches. Whilst all of this was going on we had our fabulous team planning a photo shoot of our own. We had to transport all of our food to an amazing house in Collaroy Plateau with a stunning view of the ocean; here we set up a dedadent buffet table with cakes and salads, roast beef, salmon and turkey. "You cannot beat a roulette table unless you steal money from it" - Albert Einstein... well this wasn’t the case on our Saturday night function because luckily they were not playing for cash at this casino night themed function, rather for prizes including champagne and chocolate! For this 40th on the Northern Beaches our wait staff literally danced around the black jack and roulette tables that were hired for the night to serve up an array of mini beef burger sliders, sausage rolls and our ever favourite finger food, roast beef rostis.

I count my blessing everyday for being able to live in such an amazing part of Sydney, the Northern Beaches. I personally live in the sleepy little town that is Avalon but for me anywhere from Palm Beach to Manly is absolutely beautiful and on a weekend like the one that just passed it goes from beautiful to beyond amazing.

This weekend we catered for a combined 60th for some loyal clients that have been using us for all their catering for countless years. They have a stunning house in Bayview with an even more stunning views over Pittwater. The house was beautifully decorated with paper pompoms in peaches and blues, the decorations accompanied by the weather and then of course our wonderful finger food made of an exquisite day for the lovely couple.

What a weekend this was, our catering staff braved the horrible Sydney weather and put on 3 amazing functions for us.

We left the Northern Beaches and started off out in Epping where the gorgeous Suzie prepared for a finger food party for 20 people on Friday night. Also on Friday night our amazing duo Jo and Celeste partied on at a 21st in Castle Cove. Our instructions for the night was serve the food as soon as possible and as quickly as possible so the girls and boys could go partying! I was thinking back to my 21st where my theme was “a splash of red”, everyone was to wear a splash of red. Themes and styling for events are fast becoming a very popular; we love to cater for themed events because, just like decorations, food can be styled to whatever theme you’re having. We love to play around with ideas for different menus and foods.

Speaking of themes the last event we catered for was at BYRA on Sydney’s Northern Beaches in Bayview, it’s such a magical location, even if it’s pouring with rain. The theme for the 50th was nautical and we were able to design a yummy raspberry, coconut and white chocolate cake in a nautical theme for her. All in all we were able to conquer the weather and provide outstanding catering for our Northern Beaches clients.

Our corporate catering has been going through the roof this week. We really enjoy mixing it up from our birthdays, engagements, weddings and parties on the weekends to corporate catering during the week. We were catering for morning teas and lunches for all different businesses across Sydney this week.

We also delivered some samples of our catering selections out to other companies across Sydney’s Northern Beaches, now we are in Warriewood we are much more accessible for companies to use us for catering meetings and lunches. Our fresh fruit platters are so popular along with our mini cakes for morning teas and you can’t go past our gourmet sandwiches and wraps for lunch!!

We were right back into the swing of things after the long weekend with a very busy week of party and corporate catering. Our Chefs had much to prepare for the coming weekend festivities. We catered for all walks of life this weekend on the Northern Beaches.

We started our weekend with a 40th birthday party in Collaroy Plateau, where we had a special request from our birthday boy’s wife for an individual tiramisu cake. We happily obliged and he was over the moon with his mini birthday cake. Our second function took us to Newport where we catered for another 40th birthday; here we did our tasty pails of Mussaman beef curry with jasmine rice. Whilst we were cooking curry in Newport we were also hosting a BBQ over in Clareville, this was a 21st birthday. The gorgeous birthday girl was surprised with one of our gorgeous vanilla butter cakes with pink icing and marshmallows! Lastly, we catered for an 89th birthday party in Curl Curl where we supplied a range of finger foods, followed by a whole salmon and a fillet of beef and accompanied it with two of our yummy salads!

Easter is right around the corner and we can all feel the long weekend excitement coming on!! We catered for some of our regular corporate clients in Warriewood with a special Easter morning tea where we did some of our scrumptious mini cakes with little Easter eggs on top, so cute! Plus of course you can't go past warm hot cross buns with butter, the catering went down a treat, along with the Easter egg hunt they held in their Warriewood offices for all the staff.

It is going to be a wonderful weekend on Sydney’s Northern Beaches; I am heading out to the Easter Show which should be busy but also fun. I love to go and see the animals and the wood chopping and of course who can go past those cheeky showbags! The chefs will have to roll me through the kitchen doors on Tuesday so that I can organise all of our catering jobs for next week! Wishing a Happy Easter all our wonderful Corella customers!!!

This week at Corella we catered for one of Australia’s best known theatrical producers, Mr. John Frost. This job let us do our thing on our home turf on the Northern Beaches. It was for a luncheon for one of his newest productions Driving Miss Daisy. At first, we were a bit nervous as there were a few very well respected actors at the table including Angela Lansbury and James Earl Jones, just to drop a couple of names!

It was a gorgeous day all round at our Bayview location; we catered light, summery foods; a whole salmon, Sicilian chicken and a few light salads to accompany.

To top the day off we prepared berry Eton Mess for the guests and it went down a treat! A perfect way to end a summery Sydney day!

It was Parties galore this week on the Northern Beaches. We catered for a 60th birthday in Sydney’s North Narrabeen which was a hoot. We prepared some of our new and very popular sliders and salt and pepper squid and it all went down fabulously thanks to our wonderful catering staff Shannah and Helen.

On the same night we also catered for Cameron’s 40th in Church Point, and what a lovely spot that is on the Northern Beaches, such wonderful views. Again we put on our fabulous sliders and our other favourite fish and chips... delish!

It’s so much fun when we get to cater for parties; we genuinely enjoy making your events as spectacular as we can whilst taking all the stress away from you. So keep those parties coming Sydney!!

This week at Corella Catering we have been flat out in our kitchen baking up a storm. First we made a delicious coconut, raspberry and white chocolate cake for a birthday party in Avalon. It went down an absolute treat – the feedback we got was that it was “Amazing” with a capital A.

Next our chef was in baking slabs of brownies for a customer who was giving them as a thank you to her Dad, how sweet is that. Our brownies have been his favourite dessert for over 10 years!

But there was no rest for the wicked as we then had to cater for a request for a red velvet cake with fresh cream in the middle... mmm... now this cake does take me back and right away from Sydney’s Northern Beaches all the way to the streets of New York where I was first introduced to the magnificent flavour that is red velvet. Magnolia bakery which originates from New York whips up a fab red velvet cupcake but I’m sure our own gives it a run for its money!

March already! Time flies when you're having fun. Another busy week here with many mid-week corporate catering functions, including one which took us off the Northern Beaches all the way over to the other side of Sydney in Bondi, on location at the site of The Block Allstars. The brief for this job, which was a VIP event for Freedom Kitchens, was for a high level of presentation of our catering and also highly professional and well groomed food and bar staff, which of course was not a problem for us! The most nerve-wracking part of the event was ensuring we were so careful in the beautifully designed and set up kitchen which had been so painstakingly created for the show. The catering was a sucess, we had many compliments on the food and we left the kitchen immaculate as though we had never been there.

Wow what a jam packed week of catering this has been, you would think it was Christmas time with the amount of catering jobs we have booked in! We had 2 functions this Saturday for which all of our catering food and equipment needed to be transported by boat, at Bangalla House on Scotland Island and at Currawong Beach on Pittwater and the weather just did not want to co-operate! It was certainly a challenge loading and unloading the boats at the docks in both Newport and Palm Beach, our catering staff were nearly swept away in the swell!

We overcame the inclement Sydney weather and served up a beautiful selection of finger food for Jamie & Kat's wedding on Scotland Island and a yummy gourmet BBQ for Karen's 50th at Currawong. We also supplied all the alcohol and beverages along with the catering for our function at Currawong and the hosts were very happy with the competitive prices we could offer for the alcohol plus the added bonus of being able to return any unopened cases.

Corella couldn't have become the sucessful Northern Beaches catering business it has grown into over the past 25 years without the support of regular clients across the Northern Beaches & Sydney who recognise our quality catering and unbeatable service. We are loving all the extra space in our new premises in Warriewood, after 25 years in Bilgola, we needed extra room to stretch!

All of the functions we catered this week were repeat clients which is great to see! Over time our clients also form relationships with our waitstaff so some of our staff know their kitchens like the back of their hand and this makes for a very smooth catering experience all round.

One of our catering functions this week was a special 90th at Gleneon in Belrose for a family for whom we have catered previously. Our catering staff were able to set up in their conference room and serve up delicious gruyere and caramelised onion tarts (my favourite!), fresh asparagus spears wrapped in proscuitto, fish n chip cones and much more.

With our move to Warriewood we are providing a lot of corporate catering to the surrounding businesses in Warriewood, Mona Vale and Narrabeen and with feedback such as the above, we know they are enjoying their catering! As some businesses are so close by we even accomodate by providing the option of having their catering delivered hot and ready to serve. Hot mini Moroccan lamb pies for lunch are always a treat!

There is a traditional Irish wedding blessing which starts with the line "happy is the bride the rain falls on". Somehow I think this weekend's bride Madeleine wouldn't be so quick to agree! When catering weddings you need to be quick on your feet. In this case the outdoor ceremony and photography was moved to the bride's parent's home in Mona Vale. As this was also the reception venue, this meant we had a lot of hungry, slightly soggy guests waiting for us when we arrived with the catering. After a quick set up of the cold finger food we were ready to serve and I have never seen food disappear so quickly! Before we knew it, it was time to cut and serve the wedding cake, which we placed on the lolly bar for guests to indulge themselves. The last part of the catering before we left was to carve and platter up the 8kg ham and rolls provided for late night guests to help themselves to later when they grew weary of dancing.

One of the great things about the Northern Beaches is that the beauty of our area attracts a plethora of Sydney CBD based companies who visit the Northern Beaches for film shoots, meetings and staff development days. We have established relationships with many of these large corporations which makes Corella their caterer of choice when they head North. We take great pride in delivering fresh, healthy catering options such as sandwiches, wraps, salads and hot meals, as well as a few yummy sweets and cakes (a sugar hit for morning and afternoon tea is always well received!) It is always fun for us to see some of the breathtaking and lavish homes across the Northern Beaches which are used as a venue for the day, from Palm Beach and Whale Beach with stunning ocean views, to Seaforth and Clontarf with views across Middle Harbour.

We also catered a wake this week for a Northern Beaches family for whom we have catered each Christmas for the past few years. Each Christmas they would have us cater for a thank you party in Mona Vale for all the carers who looked after their elderly mother and this time we had the privilege of being chosen to cater a lovely send off for their mother with a mixture of sandwiches and hot finger food, and of course our discrete and professional staff on hand to serve.

We are all back on deck this week with a full complement of catering bookings to fulfil. We received a call this week to organise last minute catering for a client who has used us previously and it was great to be able to assist her with catering a last minute buffet for 11 guests at her home in Balgowlah. We are looking forward to returning to their neighbour’s home in Balgowlah to cater for a function in February!

We have long been a caterer of choice for many of the retirement villages around the Northern Beaches and didn’t disappoint this weekend as we catered a 100th birthday for Keith in Narrabeen.  With delicious freshly made sandwiches, smoked salmon on sweet potato waffles, mini quiche and vegetarian rice paper rolls, Keith spent the afternoon being waited on not only by our staff but also his loving family.

Normally in this time we would take a little break from catering and recover from the busy Christmas season but not this year! We have been packing and cleaning in order to move our kitchen and offices from Bilgola to our new premises in Warriewood. With the upcoming weeks being full of catering bookings across the Northern Beaches & Sydney we are looking forward to getting set up and back to operating normally as quickly as possible.

We still had a couple of catering jobs to fill which meant using the little kitchen up at Bilgola Deli Cafe – let me tell you it is not built to have 3 chefs working side by side but we still managed to fill all of our catering orders and keep our customers happy.

Last entry for 2012! What a hectic day Christmas Eve was with all of the Christmas catering orders being collected, from small orders of sliced turkey and ham right through to huge orders of 6kg turkeys, 12kg hams and even a giant 6kg salmon! A big Merry Christmas to all of our fantastic customers and friends across Sydney and especially the Northern Beaches.

Adam, Taryn & Paul again had the privilege of attending the Mona Vale Hospital childrens ward on Christmas morning brighten the day of all the children confined to the hospital for the day. Santa was played by Steve from Vision Personal Training Mona Vale, along with his own little boy who made a very cute Elf!

We catered our final party for the year on Boxing Day with finger food for an 80th luncheon in Palm Beach. Although we usually close on Christmas Eve for catering and take a well earned break, we were more than happy to oblige for this regular customer.

Now to undertake the mammoth task of moving our entire catering kitchen from Bilgola Plateau to Warriewood. The movers are booked and fortunately for me I have the excuse of being pregnant to avoid all the heavy lifting!

Last minute Christmas catering orders have been flying in all week! Our cut off was last week but we can’t say no to all our regular Northern Beaches customers looking for something special to serve on their table this Christmas. We have also broken records with sales of our yummy fruit mince tarts. They are flying off the shelves in Bilgola Deli as fast as we can make them. We have even had customers drive across the Northern Beaches from as far as Seaforth and Forestville just to buy some!

We wrapped up the last of our pre-Christmas catering functions this week with the last jobs in Avalon, Palm Beach, Mona Vale and Warriewood again being fantastic regular clients.

Another huge week of catering across the Northern Beaches in the lead up to Christmas! This Friday was one of our busiest days of December as we prepared a full day of corporate catering for a staff day in Avalon, followed by their corporate Christmas party for 125 guests that evening. We had the opportunity to showcase our full range of services for this event. We catered sophisticated and filling finger food, plus our full beverage services including providing premium wines, beers and sparkling wine along with our experienced bar staff to set up the bar and provide drink service. All this without the hosts having to lift a finger (apart from testing our wine samples to in order to select their wines!)

The festive season is certainly well underway with this week being the beginning of 18 consecutive days of wall-to-wall catering functions. With multiple functions each day, our chefs are busy creating all the food to feed our hungry clients each day. Word of mouth is so important to a catering company such as ours and it is fantastic to see that 8 of this week’s functions are for happy clients across the Northern Beaches and greater Sydney who have come back to us again and again over the years.

Of particular note for our catering staff this week was the appearance of Elvis at one of our functions. Who knew Elvis was alive and performing at Christmas parties in Mona Vale!

Here at Corella Catering we were involved in a bit of a secret this week. A Wedding here on the Northern beaches where none of the guests had any idea they were going to a wedding. They were asked to come along for a farewell party to enjoy a game of barefoot bowls at Newport. It was the delight of many family and friends who enjoyed sharing this wonderful night with the happy couple. Our chefs cooked up a storm with some fabulous rare roast beef on potato rosti, buttermilk chicken and rice, and again those famous lamb cutlets of ours.

 The catering kitchen has been taking lots of orders for Christmas from all over the Northern Beaches this week. Everything from succulent roast turkey and all the trimmings to whole poached salmons and honey bourbon glazed hams. Of course you can’t go past our famed minced tarts and Christmas puddings. Having it all cooked and catered for you really can take the stress out of Christmas. Our wonderful catering chef’s can even take care of the roast veggies for you. All you need to do is collect on Christmas Eve!

We catered for a beautiful wedding at home this week. The 52 guests enjoyed some of our delicious canapés and not forgetting our famous orange and almond cake.

We had another fantastic busy week here in the Corella Catering kitchen. Northern Beaches parties are now getting well underway as we are nearing the festive season. We prepared a wonderful buffet for Avalon’s Family Medical Practice Christmas party whom we have had the privilege to cater for in previous years. They started with some delicious gruyere cheese and caramelised onion tartlets and big favourites the Vietnamese rice paper rolls, followed by fillet of beef & whole poached salmon, yum! We also catered for a fantastic 40th birthday party with lots of lovely comments about our delicious canapés. Always a winner are the rosemary crusted lamb cutlets served with mint dipping sauce which melt in your mouth. As we left the dancing was getting well underway.

Another Christmas party we had the honour to host again this year was for the staff at Royal North Shore hospital here in Sydney. 105 guests tucked into a feast of finger food to include grilled tiger prawns, salt and pepper squid and roasted pumpkin risotto balls to name but a few.

This would have to be one of the busiest weekends of catering we have experienced this year! Our chefs are certainly feeling the "heat" in the kitchen preparing all the delicious catering but of course it is nothing our experienced team can't handle.

We had several functions with a twist to cater for this weekend including a tall ship in Sydney harbour! Our staff were commended for their great service and providing the catering under what were at times extremely challenging conditions!

Another interesting job was 155 guests to cater for at a B&S - City vs Country themed 50th! We catered an array of finger foods followed by a moist orange and almond cake. For all the late night party animals we again catered for a glazed and baked ham and rolls which has been very popular of late at many of our functions across the Northern Beaches.

For some couples, wedding planning can be a stressful time. When we are given the privelige being the chosen caterer for a wedding in Sydney we pride ourselves on taking some of the stress from the bride and groom-to-be by providing advice not just on the catering but on all aspects of the wedding such as professional staff to serve trays of drinks, decorating, timing and run sheets for the day, suppliers for flowers and styling, entertainment and much more.

This weekend we catered for a wedding for 89 at Bilgola Surf Club, one of the Northern Beaches premier surf clubs for events, with a customised finger food catering menu featuring moroccan lamb & cous cous, juicy lamb cutlets and crunchy risotto balls.

All of our catering jobs this week were close to our Northern Beaches base this week centering on beautiful houses with stunning waterviews in Bilgola Beach, Newport and Clareville.

Firstly we must apologise to all those keen followers of our weekly News updates for the delay in our reports!

Since our wonderful 25-year celebrations where Jill Marles received a special award from the Hon Bronwyn Bishop in recognition of her fantastic achievements as a catering entrepreneur, we have been so busy we haven’t had time to keep our blog up to date!

The month started with a surprise 80th party for 40 guests at the War Vets in Collaroy Plateau. We designed a special array of classic finger food for an extremely grateful birthday boy! Our staff were congratulated on the presentation of the food and the quality of the service. We were able to offer our Beverage services and this made the whole event a stress free occasion for the organizers.

Next onto a fantastic wedding celebration for 200 guests held at one of our favourite venues the Bilgola Surf Club. Even though our staffs were rushed off their feet, we were able to showcase an exhaustive range of all our favourite dishes. The ham with fresh bread rolls we prepared was a great way to satisty late night party goers… as the night progressed this was hard to beat!

We then moved to beautiful Clareville for an engagement party for 50 people who were very specific about their food requirements and we were happy to receive rave reviews from all concerned! Again we were able to offer our special Beverage package and bar staff to save any hassle for the party organisers. Why spend the afternoon of your party lugging cases of beer and wine around when we will do the hard work for you and you can relax!

Birthday parties for 40 year olds seem to be a big feature of the Northern Beaches this year, especially in Newport, Bilgola and Avalon... must be the demographics!

 We catered for a massive 40th birthday gathering in Bilgola for more than 100 hungry partygoers who seemed to be enjoying themselves very much with backyard karaoke! Finger food was the order of the day here and we noted that guests have travelled from all over the Northern Beaches and North Shore, from Manly in the south to Palm Beach in the north and Chatswood in the West as well! We received excellent feedback from guests who had attended other recent functions who let us know that Corella were the best caterers they had encountered!

We were privileged to cater for a Wake for more than 60 guests at Belrose. They chose our special Bereavement package of freshly made gourmet sandwiches complemented with some hot finger food. Note we are able to offer our Beverage packages at Wakes to remove any stress from organising such an important event.

The busy month continued with catering for more weddings, engagement parties and birthday celebrations all over the Northern Beaches.

During the month we also catered for an intimate dinner party in Collaroy Plateau. The hosts were able to sit back and enjoy the company of their guests while our qualified and attentive staff prepared and served a sumptuous luncheon of fillet of beef, roast vegetables and all the trimmings. Before lunch was served there was an array of finger food as well. This was truly an event where the hosts became guests at their own function. Our Corporate Catering division was busy during October. We visited many businesses in Warriewood, Mona Vale and Narrabeen to present our Corporate Catering menus and Beverage packaging plans. The party travelled well into the night and our catering again received special mention!

So now we move toward the festive season busier than ever before… lucky Adam and his team of chefs enjoy cooking so much!  We enter November with an extensive range of events to cater for right across Sydney!

It has been all systems go in the catering kitchen this week culminating in a weekend packed with functions for us to cater on the weekend across the Northern Beaches, including Killarney Heights, Clareville, Mona Vale and Balgowlah. These functions were all about finger food and canape catering. Many people enquire about finger food catering with the concern that their guests won't receive enough to eat. As experienced finger food caterers, we always advise to include some substantial items to ensure that guests receive enough to eat, especially if our catering is a substitute for lunch or dinner. "Bronze, bling and boobs". We were chosen as caterers for a farewell party in Roseville before a move to the Gold Coast and what better theme to have!? We catered a range of finger food from our Corella package including sesame crusted tuna, rare roast beef on potato rosti and our new and improved recipe roast pumpkin risotto balls. We also met with an Elanora Heights couple regarding the catering and cake tasting for their upcoming wedding. We will custom cater a 3 tiered red velvet cake with a traditional cream cheese frosting upon which they will place a beautiful fresh flower arrangement.

Happy Birthday Corella Catering! We are celebrating our 25th year of catering for the Northern Beaches, North Shore and Sydney and decided to celebrate in style by catering a party for some of Corella's customers, old and new at Avalon Surf Club. We were lucky to have The Hon. Bronwyn Bishop MP attend and present a gift to Jill Marles, who founded Corella Catering (then Corella Cakes) back in 1987.

Much sought after on the night were new additions to our catering menu - mini beef burgers with chipotle mayonnaise and hickory smoked semi dried tomato on brioche buns. I can personally vouch that I have rigorously tested these and they are delicious!

Spring has finally sprung bringing with it warm days to the Northern Beaches and Sydney, could there be a more beautiful place to live?! I don't think so.

This Sunday was, of course, Father's Day and we had a local Bilgola resident come into our catering kitchen with a special request for her elderly father. He is a great lover of lamingtons and we were requested to cater a giant lamington cake for Father's Day lunch!

Among our catering jobs this weekend was another celebration for a special Dad in the form of a surprise 50th party! Our brief was to cater finger food after the big surprise and the menu included some of my favourites - salt n pepper squid, tender lamb cutlets and individual Thai beef salads for each guest, just to name a few.

Wow what a busy week for our catering kitchen and our function staff! We have had massive and far spread weekend of functions across Sydney including Killara, Davidson, Balgowlah Heights, Narrabeen and more! The biggest of these was an 80th birthday at Narrabeen Surf Club where we provided full service catering consisting of a buffet and all the hire equipment needed to serve including table linen, crockery and cutlery. Guests started by nibbling on antipastos served on each table whilst also sampling our gruyere cheese tarts and pumpkin risotto balls as canapes. The birthday was also an occasion for a family reunion so everyone settled down to chat over their mains and this was followed by a massive orange & almond birthday cake.

Corella proudly sponsors Vision Personal Training Mona Vale's 9 week weight loss challenge and this week we provided $500 worth of catering to the winner of the most recent challenge. Our staff arrived at an office building in St Leonards to a very small office kitchen, no oven and very little space to work. Not to worry! We worked our catering magic and brought along trestle tables and a portable oven, built our own little kitchen and worked hard to prepare and serve up a delicious catering menu of finger food which included my favourites the duck rice paper rolls and tender scallops with soy and ginger.

The kitchen has been kept busy this week not just with function catering but also a few special catering requests. These included a yummy gluten free cheesecake using almond meal instead of our usual biscuit base, catering for a kids party in Mosman with kids favourites crumbed chicken tenders and mini sausage rolls and last but not least a plethora of DIY finger food orders to be collected over the weekend for parties across the Northern Beaches.

The week of the sandwich.

This week we catered for many events across the Northern Beaches which required gourmet sandwiches, over 250 of them in fact! First cab of the catering rank was a Warringah Council event held in Dee Why to hand out grants to deserving groups in the local community. We were also pleased to be able to assist two Palm Beach and  Mona Vale families by catering for wakes. The former wanted catering in the form of sandwiches plus finger food including duck rolls, rice paper rolls and smoked salmon on sweet corn blinis which they could collect from our shop and serve themselves without staff to keep the wake intimate for family and friends. For the latter we were able to assist not just by catering for the food and providing staff but also delivered beer, wine, champagne, soft drink and bags of ice so the family had nothing to worry about on the day.

As one of the premier caterers in Sydney, we have been privvy to entering many private homes to cater for celebrations, mainly across the Northern Beaches and North Shore. It is always refreshing to see how people decorate their homes and a 40th we caterered in Bilgola this week did not disappoint. The deck area was beautifully decorated with a marquee, white-clothed tables and lovely white wooden chairs with small vases of flowers on each table. There were also antipasto platters adding a splash of colour to the arrangement.

For the kids there was a jumping castle and a special kids table at which we served chipolatas, chicken tenders and veggies. Everyone from the biggest to the smallest guest was well catered for and certainly well fed with mini cupcakes, cannoli, baked ricotta and fruit platters following the feast of finger food catered by us.

I have diverted from writing about our catering lately to writing about our cakes and we have had an overwhelming response with cake orders tripling! Thanks to our customers all over the Northern Beaches and greater Sydney.

Back to our main love this week – catering. Entertaining for friends and family in your home has never been easier, and without necessarily needing to have the caterer and staff in your home. This week we prepared orders for some of our regular customers to heat and cater for friends and family themselves.  Our take home finger food menu is proving to be a big hit, we have been receiving orders for customers as far as St Ives all the way through the beaches including Dee Why, Cromer and Mona Vale.

Also popular in our take-home meal department at the moment are our winter soups including smoked ham and pea, winter vegetable, leek and asparagus and field mushroom. Plus of course you can’t go past our marinated slow roast lamb too. This has been a steady favourite throughout the whole of Winter for many of our catering clients. Hopefully this cold snap passes soon and gives way to a beautiful Sydney Spring so we can launch our new catering menu!

Fancy a spot of tea? How about a high tea by Corella Fine Foods. We were called upon this weekend to cater an 80th high tea in Seaforth. The catering fare included gourmet sandwiches, elegant smoked salmon on sweet potato waffles, roast pumpkin risotto balls and more.

We also visited North Narrabeen SLSC as caterer for a memorial. The guests pointed out the fish n chip cones and gruyere chees & caramelised onion tarts amongst their favourites included in the catering. Like most surf clubs on the Northern Beaches, this surf club is a great versatile venue that could host a range of different events.

Brrrr its cold out there, Sydney! Perfect weather for one of our delicious lasagne. We are breaking records with sales of Corella take home meals in this cold weather which has the Northern Beaches in its spell.

Our catering chefs are as busy as ever whipping up buffets to satisfy our clients with mouth watering slow roast lamb, roast vegetables and apple and rhubarb crumble being hot favourites for catering functions the past couple of weeks across the Northern Beaches including Manly, Cromer, Newport and Mona Vale.

This week kicked off with our regular catering at Watermark. We catered for the residents with yummy roast pumpkin soup and lamb shanks to satisfy their Winter comfort food cravings. The residents described our soup as the best pumpkin soup they had ever eaten!

We are going strong with catering functions through what is normally a quiet period! We had a "full house" of catering jobs across the Northern Beaches including Allambie, Beacon Hill, Avalon and Newport and even made a journey to cater in Wahroongah on the North Shore. This was our second catering function within a month for this North Shore family and they were equally impressed on each occasion with the high level of catering food presented, the conduct of our professional friendly staff and loved the fact that we "truly catered to their every need".

This week was an incredibly sad one for all of us at Corella Catering and Bilgola Deli as we farewelled one of our "family", Liam Coulter. After an emotional funeral service at Northern Suburbs Crematorium which was attended by us and many of our staff, there was a wake at Avalon RSL, one of Liam's favourite places to catch up with mates over a beer. We provided catering in the form of sandwiches and petit fours for the wake which quickly disappeared with over 100 in attendance, showing just how loved and dearly missed Liam will be by all of his family and friends.

Our condolences and love go out to Liam's family and partner.

This week we received catering feedback forms back with excellent feedback from our catering functions in May, receiving a score of 98% across all of our catering jobs.

We provided DIY finger food catering for an 18th in Collaroy on the weekend, satisfying the crowd with our hot finger food on what was a freezing cold night. We recently learned that some catering companies on the Northern Beaches provide finger food straight out of a PACKET and charge premium prices for it! We find this to be an outrage and want you to know that all our catering and deli food is made with love on our premises by our team of hard working catering chefs.

Need catering for a baby shower, kitchen tea or hens? A popular trend at the moment is high tea. This week we provided a beautiful high tea for a baby shower in Dee Why consisting of hot and cold finger food, delicious sandwiches and a mixture of petit fours and sweets. They collected from us and served the food at home. I was very surprised to recieve this email from the Mum-to-be:

"Hi Taryn,

I hadn’t got a chance to email you to say thank you for the catering. The food was a hit at my baby shower. We also got another surprise that evening, my daughter decided to arrive 6 weeks early so it was a mad rush in the early hours of the morning to get to the hospital.

She is doing very well in the special care nursery and we hope to bring her home in the next couple of weeks."

This week we are reporting from New York city on a well earned holiday. We are loving exploring different foods here that we can incorporate into our catering menu when we re-vamp it later this year. A particular favourite for me are "sliders" - mini hamburgers with a variety of yummy toppings.

This week our chefs have been busy, busy, busy preparing catering for our functions this weekend across Sydney and the Northern Beaches. Particularily popular on our catering menu this week are the scallops. Baked to they are tender and smothered in a soy and ginger sauce, they are served on Chinese spoons perfect for popping straight into your mouth. Yum!

This week we closed for ANZAC Day so our catering and Deli staff could pay their respects at their favourite dawn service locations across the Northern Beaches.

After ANZAC Day it was back to doing what we do best - catering a delicious and impressive buffet in Church Point. The menu included our whole poached salmon and succulent beef fillet which are always loved by guests at our catering functions. Our clients had high praise for our beautiful food and warm and professional catering staff.

One of the best types of functions we cater for are surprise parties. It is always exciting to help plan the catering for a surprise party, even if it means suddenly being hung up on from time to time! Even better is to be one of the catering staff working at the surprise party, such as the one we catered for in Avalon this week. The staff arrived, unloaded and then hid the van aaway and the suspense built as the guests lay in wait for the birthday girl, errupting once she entered the room. The look on the face of the person being surprised is always priceless. Oh, and of course the catering was enjoyed by all!

The staff at Corella have gone crazy for Asian in April! We catered our regular themed dinner at Watermark Castle Cove this week with an Asian fusion twist to the catering. We served a mixed entree of thai chicken, satay, fresh rice paper rolls and red curry fish cakes, followed by basil chicken and lemongrass and ginger beef. The dinner went down a treat with all the residents.

We had several functions to cater for across the Northern Beaches and North Shore this week, including Mary's 80th in St Ives. With a live jazz band, dancing and all of Mary's family and friends gathered around, Mary celebrated in style. The catering we provided was a mixture to suit all ages, from Mary right through to her adorable grandchildren who were very inquisitive as to what the catering staff were up to in the kitchen, asking lots of questions.

This week was all about helping couples celebrate love with an engagement in Narrabeen and wedding in Ingleside to cater for. We are incredibly pleased that both of these functions had high praise for the quality of our food and for our professional staff. When it comes to catering for weddings, it is so important to ensure the day runs smoothly, not just when it comes to the catering but also in ensuring we go above and beyond to help with any other issues on the day.

Also this week, just to prove we can cater to any function in any location, we catered a 60th inside a marquee at Narrabeen Lake Caravan Park. The family gathered together to enjoy buffet catering whilst blessed by a beautiful Northern Beaches Autumn day.

Happy Easter! Hope everyone received something special from the Easter bunny.

With Bilgola Deli and Corella Catering closed over Easter and so many people away for the school holidays, this week was quiet for catering. We helped Danny & Eve celebrate their wedding at Narrabeen Surf Club, catering the event with a buffet. The happy couple even kept the catering in keeping with their beach theme with individual fish n chip cones as a roving canape to start.

Our catering chefs took some time recently to experiment with some new finger food and buffet catering menu options. We also are refreshing the menu for Bilgola Deli, catering for the locals by trying some yummy new meals including meatball subs, fetta meatballs with homemade tomato sauce, pot pies and ever popular winter soups to cater for those wanting comfort food in the cold weather.

April already! Next thing we know the Easter Bunny will be hoping across the Northern Beaches hiding eggs in our kid's bedrooms and we will all be gathering again for that yearly tradition of 2-up for ANZAC Day.

This week saw us return to Watermark Castle Cove to cater their monthly dinner with this month being a roast night with tender slow cooked lamb, fresh roast veggies and a delicious raspberry and pineapple triffle for dessert.

We also provided catering this week to a sod-turning ceremony for a new development in Dee Why this week, which was a first! NSW Minister for Planning Brad Hazzard was on hand to perform the ceremonial duties and after the guests enjoyed the freshly brewed coffee, pastries and mini cupcakes catered by Corella.

Feed back from our catering clients just keeps getting better and better! This week our chefs were kept busy catering to the needs of over 400 guests at parties across the Northern Beaches. What a beautiful day the Northern Beaches put on for all our happy clients! We were in attendance at the very special engagement of Natasha & Aaron in Mona Vale and our catering staff said that it was just a perfect day for the couple.

It is amazing that all of our large functions this weekend across Mona Vale, Newport, Avalon and Narrabeen chose almost identical catering menus! On top of everyone's menu this weekend was the duck rice paper rolls and marinated lamb cutlets... and they were all devoured at every function that our catering staff served them.

Sunday found us catering for 2 special Christenings in Mona Vale with one opting for finger food catering and the other for a sumptuous buffet. Everyone was left full and satisfied at both functions, with both clients taking the time to call me and to sing the praises of the catering staff from each function.

What a busy fortnight it has been! So much so that I have missed an update, my apologies!

To be sure, to be sure, Saturday 17th March was St Patrick's Day. We spent the night catering several functions around the Northern Beaches, including Stuart's green themed 50th in Newport. As guests enjoyed our delicious finger food catering, including specially made mini beef n guiness pies, there were prizes for the greenest costume and best limerick!

I am pleased to say that all functions this weekend gave 10/10 for all aspects of our catering services. We helped pull off a surprise 60th in Balgowlah and they were particularily impressed with the professionalism and friendliness of the staff, thanking them for their "thoughtfulness and fun" as well as  praising our "yummy catering" in a handwritten card. All the guests catered for at this function cheered and clapped our catering staff as they were leaving!

Happy 100th birthday to Lily! This weekend we had the privelige of catering Lily's 100th party at the War Vets in Collaroy Plateau. It was lovely to see her enjoying the day with her whole family. The Dardanelles is a lovely, fully equipped catering facility within the War Vets and it made catering for the party a breeze from the preparation and cooking of the food, to bar and drinks service, right through to serving the birthday cake for the 90 guests.

We were saddened this week by the departure of one of our long time chefs, Shannah. We will be seeing Shannah in the near future however as she will continue to work as one of our professional and friendly catering staff for functions. Did you know we have one of the largest pools of catering staff on the Northern Beaches? From sliver service catering staff through to casual staff for a BBQ, we have it all. This weekend was a busy one with an engagement in Avalon, a milestone 50th wedding anniversary to cater for in Newport and a 50th birthday in Mona Vale.

We attended 2 functions  this weekend with catering from different catering companies and it is pleasing to see that all aspects of Corella's catering services, especially our food and staff match, if not exceed, that of larger catering companies on the Northern Beaches and North Shore. I am pleased that all of the surveys received back from our recent catering work are positive with great reviews, thanks for our fantastic staff and our mouth-watering food.

This has been a week of catering that has smashed all our records! This week we have catered for nearly 600 people across the Northern Beaches, North Shore and even across the bridge to cater a 21st in Balmain. With such a diversity of catering clients, it has been a very busy week!

Vision Personal Training Mona Vale launched their latest 9 week Weight Loss Challenge with a variety of healthy finger food catering at their Mona Vale studio. We are proud to once again be sponsoring the challenge with one of the winners receiving $500 worth of function catering.

The Ulysses Club is a social club for motorcyclists over the age of 40 with over 130 branches across Australia. We were privelliged this week to cater for the wake of their founding member, Stephen Dearnley. Over 200 attended the wake, held in Newport, to celebrate Stephen's life.

It was a big weekend for 40th birthdays with 3 massive parties to cater for in Newport, Seaforth and Collaroy Plateau. One very happy birthday girl remarked that she had a fantastic night relaxing and feeling like a guest at her own party.

Not all our functions this weekend were big ones, we are happy to cater for all functions, large and small. We catered an intimate Sunday lunch for 12 in Palm Beach with our staff being treated to fabulous views over the ocean and Pittwater as they prepared the food.

There is no doubt that school holidays are over! Bilgola Deli Cafe has been very busy with an influx of parents needing coffee!

We had a few large events this weekend to cater for, mainly in Newport, Elanora and Narrabeen. Happy Australia Day! This Australia Day we had the privilege of catering for Nancye's 90th birthday in Collaroy. Despite the rainy, humid Northern Beaches weather, a wonderful day was had by all with Corella scoring top marks for both our finger food catering and for our food & drink waitstaff!

On a somber note, we were honored this week to cater a wake for the Silver family in Mona Vale. St John's is a beautiful old sandstone Church and it was a pleasure to assist the family by ensuring our staff took care of running the event seamlessly.

Hawaiian seems to be a recurring theme for us at the moment! We catered a Hawaiian monthly dinner for Watermark Retirement Village Castle Cove. With a different theme every month, our talented chefs have once again proved they can cater to any type of cuisine with rave reviews from the North Shore residents!

ALOHA! Hawaii comes to the Northern Beaches! This week we helped celebrate Grahame's Hawaiian themed 50th in Newport by catering a selection of cocktail food for the big event.

We had 2 beautiful weddings to cater for this week, one in a beautiful home overlooking Pittwtater and the other in a grand older home on the North Shore in Turramurra. We really pride ourselves on providing a seamless catering service to weddings, leaving the bride and groom with nothing to worry about but to eat, drink and be merry with their guests.

Happy New Year! Back to reality this week with the re-opening of Bilgola Deli Cafe and Corella Catering. We made some renovations to the deli over the break with a new breakfast bar and shelving for our gourmet deli items. The take home meals fridge received a work out this week with many Northern Beaches families in holiday mode leaving it up to us to cater their family dinners for the week.

We had a very special catering job this week, sponsoring finger food for the Artzpace opening night down in Avalon. With some 500 guests in attendance, our catering went down a treat and needless to say, was consumed rapidly!

This week was a record for our catering business! We have been booked solid all over the Northern beaches and North Shore all week.

One of our more interesting catering events included having the opportunity to provide finger food for Royal North Shore Hospital in St Leonards, catering inside the hospital was very interesting!

We also catered for our regular monthly dinner party to Watermark Castle Cove on the North Shore , with a Christmas theme. Our mince tarts and pudding for dessert went down a treat!

A group of hard working Elanora Heights teachers feasted on our canapés to celebrate the end of the school year.

We were very excited to welcome back many of our regular clients on this last weekend before Christmas, providing finger food catering for their year end parties both near and far on the Northern Beaches and North Shore; including Palm Beach, Curl Curl, Collaroy Plateau, Avalon, Mona Vale, Newport, Mosman and Manly.

We also provided catering to a wake at Collaroy Plateau War Vets. The family was very happy with the catering provided, as well as the seamless job done by our staff in ensuring the wake ran smoothly. We have a lot of experience assisting families in arranging catering for wakes and would be pleased to share our expertise at any time.

One of the highlights for the weekend was catering at a private home in Bilgola Plateau for an engagement party. The views over Pittwater, Avalon and Palm Beach in the distance were spectacular and the house was decorated beautifully for the 80 expected guests.

Bilgola Deli experienced record sales of coffee this week as customers took a break from Christmas shopping. We are now one of the biggest customers of our coffee supplier and have received accolades from customers who reckon our coffee is the best on the Northern Beaches... come and try it for yourself!

We had a big variety of catering work on this week as the Christmas sprit came to the Northern Beaches and North Shore! We started the week catering for a function in Bayview in the fairly new Edgewater complex. Next on the cards was a trip outside the Northern Beaches all the way to Castle Hill to cater for the Christmas Party of Hills Family Funerals.

This week saw us complete two catering events in Avalon for the one of our favourite clients, firstly a 21st and secondly for a work Christmas party. This brings our total catering functions to four this year for this client! Another happy Corella Catering customer!

We stepped outside the box this weekend, catering a BBQ at Lane Cove National Park on the North Shore. There was a beautiful buffet for breakfast including bacon & egg rolls, scones with jam & cream, fruit, pastries and much more! If you are planning an event at an outside venue, call on our experience so that you can be a guest at your own party!

The highlight for this week was catering for a wedding at Bilgola Surf Club. The bride was beautiful and we ensured all 101 guests were well fed on the finger food provided. No one goes hungry at one of our events! Bilgola Surf Club is a fantastic venue for all types of events and we are proud to be a caterer of choice at this venue.

The rest of the week consisted of Christmas party catering, birthday parties, a wake and much more. We have proved again that there is no function big or small that we can’t cater for!

During this week we spent some time analysing the responses to our Customer Satisfaction Surveys for the past year. We are pleased to share the news that we had an average Satisfaction rate of 96%! We have learned from the 4% and will be trying for 100% in 2012! Put us to the test for all your catering needs on the Northern Beaches and North Shore!

The week started with a full book of catering events, from our faithful band of existing customers and a whole lot of new customers!

Early in the week were at Collaroy for a function for 18 guests.. it was fantastic to see a perfect afternoon on the Northern Beaches and the hosts relaxed as they enjoyed the catering along with their guests.

Narrabeen Surf Club is a fantastic venue for all types of functions and we are pleased to offer catering services at this beautiful place. In recent times we have catered for a wedding, an engagement party and a birthday party for a wide range of tastes and guests.

Bilgola Plateau events were a feature of this week as well. Having been established in the Plateau Road premises for more than 20 years, the “locals” don’t have to travel far to organise the best catering on the Northern Beaches!  One of our regular Bilgola customers reckons a week without eating some Corella duck rolls or vegetable frittatas is not worth living.

We also catered for many clients who wanted to reduce costs by taking home our DIY catering. This week we received a special thank you note from a television producer! We recently catered for a television show being filmed on the Northern Beaches! They required food for breakfast, morning tea and lunch all fit for a movie star and we were pleased to exceed their expectations.
